Why Aahar exists
You are what your ancestors ate.
Our bodies are older than our menus. We are built to thrive on the food that has always been available around us.
Our bodies are older than our menus. For most of human history we ate what grew around us. Our intelligence has since changed the world outside us at astonishing speed: in barely two generations we went from the first powered flight to flying on another planet. Our insides have not kept up. The engine is the same; only the fuel keeps changing, and labs invent a new dish every morning.
You are what your ancestors ate. We are built to thrive on the food that has always been available around us. After a long trip around the world, through quinoa, blueberries, imported nuts and dates, we are coming full circle: back home, to soul food.
Local produce, from not too far. Ragi and other millets, moringa, jackfruit, desi ghee, coconut, the many local kinds of common vegetables, and the fish, rice, pickles, sweets and snacks that Udupi's kitchens have always made.
